BLUEBERRY CLAFOUTI

Clafouti is a kind of fruit pastry or thick fruit pancake which is delicious made with fresh fruit.  From France, it is typically made with black cherries.

 6 large eggs

2 cups milk

3/4 cup flour

½ cup berry sugar

pinch salt

1 tsp vanilla extract

1 Tbsp brandy

2 cups fresh blueberries

icing sugar 

With either metal or plastic blade in place, add eggs and beat with a few on/off turns.  Slowly pour milk through feed tube until blended. Then add flour, sugar, salt with vanilla and brandy and blend well.

Pour enough of the batter into a 2-quart souffle dish, to just coat its bottom, sprinkle the blueberries over, and cover with the remainder of the batter.

 Bake in the middle of a 350F oven for about one hour or until the top of the clafouti is a golden brown.  Dust the top lightly with icing sugar and serve while still warm.  Serves six to eight.
