BLUEBERRY BUCKLE 3/4 cup sugar 1/4 cup vegetable shortening 2 eggs ½ cup milk 1 ½ cups all-purpose flour 2 tsp baking powder ½ tsp salt ½ tsp ground nutmeg 1/4 tsp ground cloves 1 ½ cups fresh or frozen blueberries, thawed ½ cup sugar 1/3 cup all-purpose flour 1/4 cup butter or margarine
Mix sugar, shortening, eggs and milk until well blended. Stir in flour, baking powder, salt, nutmeg and cloves. Fold in blueberries. Spread batter in greased 9" square pan. Combine remaining ingredients and mix with fingers. Spread mixture over batter. Bake in moderate over (375F) for 45 - 50 minutes, or until top springs back when lightly touched. Serve warm, cut in squares. If desired, serve with lemon sauce. |
