SPICY BLUEBERRY CAKE ½ cup butter 1 cup sugar 2 large eggs 1 tsp vanilla 2 cups all-purpose flour 2 tsp baking powder 1 tsp baking soda ½ tsp salt ½ tsp ground cloves 1 tsp ground cinnamon 1 tsp grated orange rind ½ cup orange juice 2 cups fresh blueberries
Beat eggs and sugar until well creamed. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder, baking soda, salt, cloves, cinnamon and orange rind. Add flour mixture to creamed mixture, alternating with orange juice and mixing well after each addition. Gently fold in blueberries. Spoon batter into greased and floured 10-cup bundt pan. Bake at 350 F for 45 to 50 minutes or until done. Cool cake in pan for 10 minutes, then turn out on to rack and cool completely. |
