GLAZED FRUIT Apricot jam and orange juice make a fine glaze for a mixture of fresh fruit. 9-oz jar apricot jam 2 Tbsp orange juice 12 fresh apricots 4 ripe bananas 2 cups fresh blueberries 1 cup whipping cream 2 Tbsp sugar ½ tsp vanilla extract
Heat apricot jam and orange juice in a small saucepan just until bubbling. Buzz in a blender until smooth or pour into a course sieve with the back of a large spoon. Press through as much of the apricot pulp as possible. Cool and chill. At serving time, cut apricots in half. Remove stones and put in serving bowl. Peel bananas and slice in same bowl. Add blueberries and poor chilled apricot jam mixture over all. |
