BERRY BEST BLUEBERRY BARS

Crumb topping:

½ cup all-purpose flour

1/3 cup firmly packed light brown sugar

1/8 tsp ground nutmeg

1/8 tsp ground cinnamon

1/4 cup butter or margarine

 

Blueberry cake:

½ cup butter or margarine, softened

3/4 cup sugar

2 large eggs

½ tsp vanilla

1 ½ cups all-purpose flour

1 tsp baking powder

1/4 tsp cinnamon

2 cups fresh blueberries

 

For crumb topping, in a small bowl stir together flour, brown sugar, nutmeg and cinnamon.  Cut in butter until well combined.

 

For cake, in a medium bowl, cream butter and sugar until light. Add eggs, one at a time, beating well after each addition.  Beat in vanilla.  In a medium bowl, stir together flour, baking powder and cinnamon.  Stir into creamed mixture.  Spread batter evenly into a greased 9x13 inch pan.  Top with blueberries.  Sprinkle with crumb topping. 

Bake at 350 deg F for 45 minutes or until golden.  Cool on wire rack.  Cut into bars.  Serve fresh and warm with cream or ice cream.  Makes 12 servings.
