BLUEBERRY STREUSEL CAKE 1 cup sugar, divided 4 tsp cornstarch ½ cup grape juice 2 lemon slices 1 cup fresh blueberries 2 -1/4 cup all-purpose flour 3/4 cup butter ½ tsp baking soda ½ tsp baking powder 1 tsp grated lemon rind 1 egg, slightly beaten 3/4 cup buttermilk or soured whole milk Combine 1/4 cup of the sugar and corn starch in a small saucepan. Stir in grape juice; add lemon slices. Cook over medium heat, stirring constantly, until mixture boils and thickens. Cook an additional 2 min. Discard lemon slices; add blueberries; cool. |
