BLUEBERRY PIE Baking time: 40 min Makes: 12 servings
3/4 cup granulated sugar 1/4 cup whole wheat flour 1 egg, lightly beaten 4 cups blueberries or Saskatoon berries 2 Tbsp butter whole wheat pastry for 2-crust pie
Blend sugar and flour together in a large bowl. Whisk in egg. Add berries and stir until coated. Preheat oven to 450F. Roll out half the pastry and line a 9-inch pie shell. Do not prick. Roll out top crust. Turn berry mixture into pie shell. Dot with little bits of butter. Cover with top crust. Seal and flute edges. Slash top in several places. Bake on bottom shelf of preheated oven for 10 minutes. Reduce heat to 350F and continue baking for 30 to 40 minutes. |
