BLUEBERRY LEMON MOUSE 2 Tbsp lemon juice 2 Tbsp water 1/4 cup sugar 1 tsp lemon rind 2 egg yolks
Cook lemon juice, water, sugar, lemon rind and egg yolks in a pan over hot water and stir 5 - 7 minutes till thick enough to coat metal spoon. Cool bowl in cold water and leave in fridge till ready to use. Cover with plastic wrap. Before serving, stir in a small tub of whipped cream substitute. |
