BLUEBERRY LEMON COBBLER 3 cups frozen blueberries 1/3 cup sugar 2 Tbsp grated lemon rind 3/4 cup all-purpose flour 1/4 cup sugar 1/4 tsp salt 1/4 tsp baking powder 1/8 tsp baking soda 3 Tbsp butter or margarine 1 large egg 1/4 cup buttermilk ½ tsp vanilla
Toss berries with the 1/3 cup sugar and lemon rind in one-quart casserole. Mix flour, 1/4 cup sugar, salt, baking powder and soda in medium bowl. Cut in butter until mixture resembles fine crumbs. Beat egg, buttermilk and vanilla together until blended; add to flour mixture and stir to mix. Drop by spoonful over berries. Bake at 375 f for 40 minutes or until topping is a golden brown. Remove to rack and cool slightly. Spoon into dessert bowls. Makes 5 servings. |
