BLUEBERRY FRENCH CANADIAN TOAST

Dip thick slices of French bread in beaten eggs and fry in butter.

 

Sauce

1 cup blueberries

½ cup water

6 Tbsp corn syrup

1 Tbsp lemon juice

Simmer for about 15 minutes. Remove from stove.  Add

1 Tbsp butter

Cool slightly.

Stir in another cup fresh or frozen blue berries and serve warm over French toast.

 

Blueberry Syrup 2:

3 cups blueberries

2/3 cup corn syrup

dash of salt

 

Pour in blender.  Beat well.

Serve syrup over pancakes or ice cream.
