BLUEBERRY COBBLER 4 nonstick cooking spray 1 ½ cups fresh blueberries stemmed and sorted or thawed frozen dry-pack blueberries. 1 Tbsp orange flavored liqueur, such as Cointrea 2 tbsp plus 2 tsp granulated sugar 2/3 cup skim milk 1/3 cup sifted all-purpose flour 1 large egg 1 tsp grated orange rind 2 tsp vanilla extract ½ tsp ground cinnamon 1 Tbsp confectioners sugar (optional)
Preheat oven to 350 F. Coat a 1.5 L (6 cup) shallow baking dish with the cooking spray and set aside. In a medium-size bowl, toss the blueberries with the orange-flavored liqueur, if desired, and 1 tsp sugar and let stand, uncovered, at room temperature for 30 minutes. In an electric blender or food processor, combine 2 Tbsp of the sugar, milk, flour, egg, orange rind, vanilla, extract and cinnamon by whirling for 5 seconds or until smooth. Spoon the blueberries into the baking dish, pour the batter evenly over them, then sprinkle with the remaining 1 tsp sugar. Bake for 1 hour or until puffy and golden, sprinkle with the confectioners sugar, if desired, before serving. Serves 4. |
